Not all kitchen gadgets are gleaming devices shimmering with moving parts. Sometimes, utility is provided by something just sitting there minding its own business. Take tea, for example: not much goes on while it steeps. Another example might be ice chilling down a beverage. Finally in a trifecta of passivity, infusions require little more than placing a bunch of sliced fruits, herbs, and whatnot into a liquid. Considering the simplicity involved, it only makes sense that there would be one kitchen helper designed to do all three of these tasks.

The Primula Flavor It Beverage System 3-in-1 Infuser Pitcher, which retails for $45, is a simple device designed to brew, chill, or infuse. Creating the perfect beverage requires little more than switching among the three interchangeable inserts. The tea core includes a fine mesh screen to be used with loose-leaf tea or ground coffee, while the fruit infuser core can be used not only to flavor water with sliced fruit but could also be used in tandem with the tea insert so as to create homemade flavored tea. Finally, rounding out the BPA-free pitcher is the chill core, which is filled with a nontoxic gel. Just keep this part in the freezer and after letting the pitcher do all the work brewing and infusing, pop it in, sit back and continue relaxing with drink in hand.

Secrets to Ciabatta Bread

Our recipe for this classic Italian bread promises to live up to its name, while also delivering tangy, yeasty flavor, an airy interior, and a texture that makes an ideal bed for anything you would want to spread, place, or melt on top.

1. MAKE BIGA: Biga is a pre-ferment used in Italian baking. To make it, combine yeast with small amounts of flour and water and let it rest overnight to build flavor.

2. MAKE DOUGH, KNEAD: Add the biga to the remaining dough ingredients, then knead the dough in stand mixer.

3. LET RISE: Allow the dough to rise at room temperature until it has doubled in size, which will take about 1 hour.

4. TURN 8 TIMES: Turn the partially risen dough by folding it in on itself to gently encourage more gluten development. Let it rise for 30 minutes.

5. REPEAT STEP 4: More turning and rising ensure a loaf with just enough lift.

6. DIVIDE DOUGH: Transfer the dough to a floured surface and halve it with a bench scraper.

7. PRESS: Press each half into a rough 12- by 6-inch rectangle.

8. SHAPE: Fold each half of the dough like a business letter (it should make a 7- by 4-inch loaf). Then let it rest for 30 minutes.

9. PRESS, SPRAY, BAKE: Press out the dough into 10- by 6-inch rectangles, spray them with water, and then bake them in the oven.

Stiles Switch BBQ & Brew Austin, TX

I have been seeing great photos over the last few months from Stiles Switch BBQ & Brew in Austin, Texas on their facebook feed and have been meaning to gather them up to share. If youre in North Austin and craving BBQ youre really doing yourself a disservice if you dont stop in. Lance, James and owner Shane are working hard to put out quality and consistent cue along with great beers. Also, they have tons of flat screens throughout their rather large restaurant and are open all day long (see hours HERE), but closed Mondays.

Breakfast is more than the sum of its parts. Sure, bacon, egg, cheese, ham, sausage and the like are all delicious enough on their own, but when put together something magical happens. The transformation of breakfast ingredients into a breakfast meal is one that can happen in so many ways. Yet time and time again, people gravitate towards a classic: the breakfast sandwich. Often prepared with an English muffin or a bagel, the mingling of ingredients creates an easy to carry meal that is packed with flavor. And now, one kitchen gadget wants to make it even easier to construct -- by doing it for you.

The Hamilton Beach 25475 Breakfast Sandwich Maker ($24.99; available March 2013) is an all-in-one machine designed to do it all. Upon layering ingredients inside the contraption, the device then cooks them all together, bringing into existence a completed breakfast sandwich. All that is missing is the wrapping paper from a fast-food restaurant and the wait at the drive-through window. But how does it accomplish such a delicious feat?

The kitchen appliance features a special sliding cooking plate that enables the breakfast sandwich to be presented at the end of the cooking process as a completed whole. Egg, cheese, ham, bacon or sausage, and English muffin come together like a magician's trick, just tastier. The trick to the gadget lies in the center cooking plate. After the egg is cooked, the plate slides out and the ingredients fall together, completing the delicious tower of goodness that is portable, presentable and most of all consumable with a minimum of effort. Naturally, after the breakfast sandwich is called into existence, it's not too hard to predict that the next trick to happen will be a disappearing act.

Erni Walker & Chris Cantey Meat Week Co-Founders My Favorite BBQ Joints Volume 34

Every week is unofficially meat week for me, but it took two forward thinking co-workers, Erni Walker and Chris Cantey, to create an entire week long event devoted to specifically to meat, and more importantly, barbecue. Per their site, Meat Week is a national holiday that started in 2005. Each January, for 8 consecutive nights, people across the country gather over piles of BBQ. In every participating city, there is a devoted Captain who creates the schedule of restaurants. Each city develops their own traditions, but Meat Week typically focuses on good ol American BBQ: Pork, ribs, brisket, barbecued chicken, and anything else you can smoke and smother in sauce.

I had the pleasure of meeting the two of them last year at Smoke City Market and this year I plan to hit up at least three of their stops. Meat week begins Sunday January 27th in cities across the United States. If youre reading this, you like BBQ, so you pretty much have to go to at least one night. So here are Erni and Chris favorite BBQ joints in their words:

When we moved to Los Angeles, people said there was no way wed scrape up enough restaurants to have an entire week of BBQ. When we came up with more than enough, they said none of them would be any good. We beg to differ! Most of the BBQ on our list comes from L.A. and the surrounding areas, because even though we grew up in the south, we have found some of our favorites right here on the west coast. (Granted, some of them are southern transplants, but still) Meat Week and all its cross-country chapters has proven to us that BBQ isnt relegated to one region. Where theres a person with a meat smoker, some patience, and a special touch, there will always be great BBQ.

Moms BBQ House Van Nuys, CA
The food, atmosphere, and service at Moms makes this our favorite in LA, hands-down. The first time we went here, our minds were blown, and weve never had a less-than-incredible experience. The ribs fall off the bone, the pork is amazing, the linksmy god the links! This BBQ has a real weight to it, in a good way. Its usually smothered in sauce, but somehow the flavor of the meat shines through, and the sauce becomes an aftertaste.
But fighting for the spotlight in this show, is the mac and cheese. Theres a sweetness to it that makes it totally unique. We have friends who hoard it for weeks after our visit. They even know to make excess when were coming. Mom and family are from Louisiana, so they put some swamp flare into the food. Greens, fried chicken, and gumbo are also menu favorites. Our group is too big to fit in their tiny storefront, so every year they open up the storage room next door and let us set up tables and chairs! Its amazing, eating between shelves full of Crisco and cake mix. It creates a special atmosphere that no one else gets to experience, and thats southern hospitality at its best.

Hambones BBQ and PoBoys Bellflower, CA
Last year was our first time visiting Hambones, and it couldnt be more worth the drive! There is some kind of magic going on in that kitchen that weve been thinking about all year. The Combination Platters are the best way to experience everything here. Theyre basically catering tins full of links, pulled pork, ribs, and brisket, all swimming in delicious, slightly-sweet sauce. Bring your friends, pitch in, and go to town! The meat has some very special flavors that captured our memories, but the peach cobbler was almost the most unique. Its like the best Georgia peaches youve ever tasted got together with a cinnamon roll and created a delicious, gooey baby. Its addictive. They have a big back patio with heaters and televisions, great for watching football. Just when we thought it couldnt get any better, they switched on the radio and cranked some Mariah Carey slow jams. Heaven truly is a place on earth.

Kansas City BBQ Company North Hollywood, CA
This place (formerly located in Toluca Lake) is run by brother and sister Nabeel and Shireen Kort. Theyve been at the Magnolia location for a few years now, and are constantly improving the place. The bar they added on makes it a great hangout for locals. Most importantly though, the food and service are amazing. Ive never seen slow-cooked food move so fast! A lot of BBQ fanatics look down upon the humble sandwich, but these guys do it right: Sliced pork layered between three (three!) pieces of good ol white bread, stacked high and spiced just right. All of their meat has a spiciness to it that can take a back seat to sweeter sauces, but theyve found some magical algorithm for combining sweet and spicy perfectly. The hot links get special mention here, because they up that spicy quality without sacrificing flavor.

Sonnys Real Pit BBQ Southeast Region
Okay, so Sonnys is a chain. But its also the birthplace of Meat Week itself. Sonnys first opened up in Gainesville, Florida, and then spread throughout the state, and eventually up through Georgia and a little beyond. Both of us grew up eating at Sonnys once a week or more, and it really fostered our BBQ obsessions from an early age. When we met at college in Tallahassee, we both missed that warm feeling of gathering over great BBQ and bonding with friends and family. Thats a big part of what spawned the whole Meat Week idea, so naturally we began our holiday at the birthplace of our love for BBQ: Sonnys. Although the menu is ever-expanding to include new sauces and different rubs, the sliced pork and sliced beef at Sonnys are the standouts. Theyre so tender, full of smokey flavor, and always sliced perfectly thin. Pile em on the garlic bread with Sonnys Sweet Sauce for a flavor explosion thatll make you slap your mama. Theyre experimenting with some new rubs, but their classic pork ribs have a flavorful stickiness to the bark that lingers long after theyre gone.

And the sauces. Oh, the sauces! Theres Original Mild, Smokin, Mustard, Sizzlin Sweet, and the mother of all: Sonnys Sweet Sauce. This is the sauce that haunts our dreams. Since we cant get to Sonnys out here in Cali, we buy gallons of Sweet Sauce from their website. Its measured out and treasured for as long as we can make it last. Its a holy grail constantly sitting on the counter, reminding us of what awaits us on our next trip back south.

Low Country Dining Marion, NC
This is Chriss fathers restaurant, which he opened in 2010 after years of making BBQ for other people. Mike Cantey has been in the restaurant and catering business with the rest of the Cantey family for decades, and BBQd meats have always been at the core. Western North Carolina knows him well.

Mike is inventing new types of brisket over here, including a garlic and rosemary brisket. The meat just falls apart and melts in your mouth while delivering a complex, amazing flavor thats just outside of the usual range of BBQ tastes. His pulled pork is classic North Carolina style, with a sweet vinegar kick and just as much tenderness as the incredible brisket. All of the sides here are to die for, including the fried green tomatoes and tomato pie, made with fresh local tomatoes. An important addition and HUGE seller recently added to the menu is the banana pudding, based on Chris Canteys own personal recipe! Chris has been making this banana pudding for years, and we cant keep it on the table. No matter how much he makes, it disappears in no time. Like BBQ father, like BBQ son!

The evolution of the toaster has not been one without its surprises. Imagine the shock of the first individual who discovered that it was possible to not only toast a slice of bread, but also reheat a slice of pizza in one of those new-fangled toaster ovens. Not surprisingly, countertop cooking has not been the same since. Nowadays, toasters, toaster ovens and the like have become sophisticated pieces of gadgetry that can cook everything from a whole pizza to rotisserie chicken. However, that doesn't necessarily make them any less mysterious.

The Adjustable Bread And Sandwich Toaster ($129.95) brings magic back to the kitchen countertop. Featuring an adjustable lever on the top of the appliance, the device is capable of accommodating sandwiches or other bakery products up to 2.33 inches thick. The vertical toaster mimics a traditional toaster in design, but by being able to toast bagels and small croissants, the appliance sets out in a new direction.

The included metal sandwich basket helps to contain whole sandwiches. Finding the proper heat setting from the given ten available browning settings might prove to be somewhat of a mystery, but considering the subject matter, it should prove to be a series of delicious experiments. Just don't try to reheat a slice of combo supreme.

1. Make the chocolate pudding: Melt the chocolate, cocoa, and hot water together in a large bowl set over a large saucepan of barely simmering water, making sure the water does not touch the bottom of the bowl. Then add the sugar. This chocolate pudding boosts the chocolate flavor and adds moisture.


2. Whip the eggs and sugar: Whip the eggs and egg yolks in a large bowl with an electric mixer until combined. Add the remaining sugar and whip until voluminous and very thick. Whipping the sugar and eggs until they form ribbons add volume to the cake and make it fluffy.


3. Beat the chocolate pudding into the eggs:
Beat the cooled chocolate mixture into the egg mixture until fully incorporated. To avoid a heavy batter and dense cake, it is important to add the thick chocolate pudding to the batter before the flour.

The other key is to use superfine sugar and cream cheese when making the dough: This produces a workable cookie without turning it tough. Then comes the fun part: Assembling the delicious little treats.

MAKING JAM SANDWICHES

1. Using a 2-inch fluted round cookie cutter, cut rounds from one piece of the dough.

2. Sprinkle the second piece of rolled dough evenly with the sugar.

3. Using the 2-inch fluted round cookie cutter, cut out rounds of sugar-sprinkled dough. Using a 3/4inch round cookie cutter, cut out the centers of the sugared rounds.

4. When the cookies have cooled, spread the jam on the solid cookies, then place the cut-out cookies on top.

Water is easy to take for granted. It comes out of the faucet, we collect it in a glass, and drink it to quench our thirst. But there is more to it than that, of course. Bottled water, filter pitchers, and other countertop systems have proliferated over recent years, all in an effort to make water taste and smell better to us, not to mention making it safer to drink. What that means in real life is that by connecting a filtration system to a specially designed water faucet, water usage and statistics can be monitored with a smartphone.

The Zuvo filtration system is a uniquely designed home water treatment process that combines UV light, ozone, and a carbon filter for an innovative means of cleaning common tap water. Previously available (and reviewed) only as a filtration system, the new Stratus takes home water care to an entirely new level. By combining a smartphone app (to relay information about contaminants removed, filter longevity as well as household water consumption), with Wi-Fi enabled faucets, the system explores new territory while providing proven results.

Currently an Indiegogo campaign, the company sees future possibilities where the communicated data from the device will eventually lead to a comprehensive water quality map that uses the national water database as a starting point. Giving the everyday kitchen water faucet a voice is certainly an intriguing idea, and the campaign looks to be off to a healthy start toward achieving its goal of raising $50,000 to get the project started. With a target date of June 2013, it looks like we might soon be taking this next stage of drinking tap water for granted, too.

Baking tips: how to soften butter

Betcha didnt think Christmas cookie baking could be improved with your microwave.

This weekend, the ladies in my family attempted to start a tradition of Christmas cookie baking.

Baking Christmas cookies takes a lot of planning and shopping and measuring and mixing and of course, baking (which includes cooling and sometimes rotating, if your oven lacks convection).

My soon-to-be sister-in-law chose to make theseRussian Tea Cakes for the first time ever. The recipe calls for a cup of softened butter, but because we were making 6 dozen instead of 4 dozen, we needed a cup and a half of softened butter (thats a lot). And although I am horrible baker, she asked me a question I could actually answer:

How do you get butter to soften without melting it?

Because of our early morning start, the butter I brought to my moms was still refrigerator-hard. So we needed to intercede.

Perhaps your experience with softening butter in the microwave involves you nose pressed up against the glass nuking the flavorful fat ingredient in short intervals and praying it doesnt melt.

To soften our cup and a half of butter, we microwaved each stick for a minute a piece at 10% power.

Based on your microwave, you might want to amp up to 20% and adjust the time or even use the defrost setting (which is 30% power).

Later, we also adjusted our microwave power to soften cream cheese for Peanut Butter Balls(which are amazing, by the way).

Microwave power levels can also come in handy for reheating foods, Ive found. Foods like pizza and French fries revive less soggier when microwaved longer at lower power.

Secrets to Apple Slab Pie

Apple slab pie is a great way to feed a big crowd. Traditionally, its a double-crusted affair filled with spiced apples, and baked on a baking sheet. Short in stature, the filling is thickened to ensure neat slicing, and its topped with a sugary glaze.

And its bigreal big. Like, serves-20-people-big. Regular old single-crust pie dough just wont cut it, but making and rolling homemade pie dough for such a huge pie is a time-consuming project. So we came up with a few tricks to make the process easier. A pie this big needs a double batch of double-crust dough, but instead of trying to roll out one large crust, which was difficult to do, we rolled out four 12-inch circles, two rounds for the bottom and two rounds for the top. By taking two dough rounds and overlapping them to create one large rectangle, the dough became sturdier, and was much easier to handle. Finally, we rolled the dough in cookie crumbs to add a crisp texture and help prevent this large pie from becoming soggy.

MAKING APPLE SLAB PIE

1. Pulse animal crackers and sugar in a food processor until finely ground. Dust work surface with cracker mixture and lay 2 overlapping pieces of the pie dough on top. (Brush water between them to help seal them together.) Sprinkle more crumbs over the top and roll the pieces of dough into a 19 by 14-inch rectangle.

2. Using a rolling pin, transfer the dough to a rimmed baking sheet. Lift and press the dough into the baking sheet, letting the excess dough hang over the edge. Brush dough with butter and refrigerate until needed.

3. Add the apple filling, then roll the remaining 2 pieces of dough together into a 19 by 14-inch rectangle with the remaining crumbs. Using a rolling pin, arrange the top crust over the apples.

4. Press the edges of the top and bottom crust together. Trim the excess dough to inch, fold the crust underneath, and crimp the edges using the tines of a fork.

Countertop oven hides healthy cooking in plain sight

The annual changing of the calendar brings with it a multitude of promises that nobody intends to actually keep. That's OK; it's just all part of tradition. Things get said, feelings get hurt, but in the end, what really matters more: a couple of extra pounds or never seeing a frozen pizza again? Better to err on the side of caution, apologize to all those fatty and greasy foods -- but keep a little room for healthy steam cooking hidden in plain sight.

Never say never again with the Cuisinart Combo Steam and Convection Oven ($299.95). The overachieving toaster oven features simple cooking modes that can handle healthy steam cooking as well as the occasional frozen pizza. A 47-ounce water reservoir attaches to the side of the countertop appliance and allows for up to 2 hours of continuous steaming. Just fill, select a steam setting, and healthy foods can snuggle up in the same gadget that was used just hours before to heat up some sugary toaster pastries.

Preset functions account for all the standard features one would expect to find on a toaster oven type contrivance, plus a few more: toast, convection bake, bake steam, broil, broil steam, steam, super steam, bread, warm. While the appliance allows for everything from proofing bread to steaming a quick meal of fish and veggies, of course what you do with all those choices is entirely up to you. Secrets to Profiteroles

Profiteroles might just be the most perfect dessert in existence: crisp, tender, and airy pastry encasing cold, creamy ice cream and napped by dark, luxurious chocolate sauce. Unfortunately, perfect profiteroles are often enjoyed only in the abstract, as those served in many restaurants are stale and indelicate, with a texture somewhere between damp cardboard and Styrofoam.

The challenge is the profiteroles base: pte choux. This is the most basic French pastry and is made with just a few simple ingredients, and it bakes up into light, airy, well-puffed pastries with a delicately crisp crust. But beware the pitfalls of bad pte choux. The dough will spread on the baking sheet if too soft, and it may not rise properly. It may bake up lopsided, it is subject to collapse after baking, and finally, the most common problem, it can turn soggy as it cools. Scared? Dont be. Our simple recipe and failproof procedure will help you make profiteroles like a pro.

MAKING PROFITEROLES

1. Pipe the pte choux into evenly sized 1-inch mounds on the prepared baking sheet.

2. Use a wet finger to even out the shape and smooth the surface of the piped mounds.

3. Once the pastries are baked, cut a -inch slit into the side of each puff to release the steam. Return the pastries to the oven, turn the oven off, and prop the oven door open with the handle of a wooden spoon. Let the pastries dry until the center is just moist (but not wet) and the surface is crisp, about 45 minutes.

4. Scoop the ice cream onto a chilled parchment-lined baking sheet, cover with plastic wrap, and freeze until firm.

5. Use a paring knife to split the pastries about inch from the bottom.

6. Arrange the pastry bottoms on individual serving plates or a large serving platter and place 1 scoop of ice cream on top of each pastry. Lay the pastry tops over the ice cream and press lightly to secure. Drizzle with warm chocolate sauce before serving.

WHEN GOOD PROFITEROLES GO BAD

Its important to bake pte choux pastries until they are browned and firm. If they are removed from the oven too soon (when browned but still soft, as shown on the left) they will collapse as they cool and have a dense, tough texture.
